Cooking and Reflecting During the Pandemic!
If you are like me, you did a lot of cooking over the last year. Being home more than normal due to the global pandemic, gave me the opportunity to cook more home cooked meals for my family.
Cooking is a form of therapy for me so I love to do it, when I’m in the mood.
Given that we were all home, all day, I got in a lot of therapy! For the most part, I pretty much cooked lunch and dinner. Breakfast however, you were on your own. Each of our days started at a different time. Therefore, it just made sense for everyone to be YOYO (you’re on your own). However, I must give credit where credit is due, my niece did make breakfast for me at least once a week, when our schedules were in sync.
As an auntie/mom, I am so proud she is discovering the kitchen. As long as I can remember, I have always been comfortable in the kitchen and wanted her to experience it at her own pace. Sometimes, I wish she could have experienced the kitchen the way I did growing up, with my mom, aunts, sister and great-grandmother. We were all in the kitchen at the same time with each of us focused on our own tasks. My great-grandmother would be sitting holding her cane in front of her and eyeing each of us ensuring we are carrying out our tasks the right ways. My mom, aunts and my sister and I tasking and talking at the same time. I learned so much just by listening to the conversations between my mother and aunts. Those memories I wish my niece could have experienced.
Over the course of the last year, I thought a lot about those times and each time I smile.
So, even though the last year has been more than trying, I really did get to revisit great kitchen memories of the past, while making new kitchen memories with my niece.
This delicious looking Bacon Avocado Toast was made compliments of my niece. Like I said, proud auntie!
